Homemade Roasted Red Pepper Hummus
One of the best reasons why I tend to keep a few cans of garbanzo (chickpea) beans in the pantry is to make hummus, I love hummus! Simply delicious. I tend to use it as a dip with my favorite veggies or I will sometimes spread it on my turkey sandwich for some extra flavor. It is so easy to make with a food processor or even better yet a Vitamix, which I have to say is a total must have in the kitchen. This fresh and flavorful dish will be absolutely perfect for this weekend's Labor Day B-B-Q. Enjoy your holiday weekend!
Ingredients
1/4 cup fresh basil
1 teaspoon balsamic vinegar
1 16 oz. can of garbanzo beans- drained
5 oz. roasted red peppers- drained weight
1 large garlic clove
1 Tablespoon extra virgin olive oil
1/2 teaspoon black pepper
Sprinkle of sea salt
Method
1. In a food processor or Vitamix, combine the first five ingredients. Process until smooth.
2. With the food processor on, slowly add in your olive oil.
3. Stir in black pepper and salt.
4. Serve with raw vegetables, whole grain pita bread, or plantain chips.
